Owner David Choi opens third outpost for his popular Korean-Mexican restaurant
(ST. LOUIS, MO) — Owner David Choi of Seoul Taco opens the third location of his popular Korean-Mexican fast casual restaurant, Seoul Taco, in Champaign, IL at 608 South 6th Street.
Known for their addictive Korean-influenced Mexican dishes of tacos, quesadillas, burritos, nachos, and more, the St. Louis-based restaurant’s Champaign location opened on Saturday, March 12. Located only a block from campus, students and locals alike will have a new affordable lunch, dinner, and late night destination (weekend hours until 2 a.m. will begin in April).
The menu showcases the recipes and flavors of Choi’s childhood in an interesting way. Guests can pick their protein for dishes such as the Bulgogi Beef Tacos ($2.50 per taco) with Korean salad mix, green onion, secret “Seoul Sauce,” crushed sesame seeds, and a wedge of lime or one of Choi’s favorites, the Spicy Pork Gogi Bowl ($7), his take on bibimbap, with rice, fresh veggies, fried egg*, carrots, green onion, sesame oil, and spicy Gochujang pepper sauce (fried rice is an extra $1).
Seoul Taco Champaign showcases the restaurant’s urban, street art-inspired design with graffiti art from St. Louis based artist, Daniel Burnett. In addition to the artwork on the walls, Smartmouth Design’s Alex Morales combines reclaimed woodwork with steel wainscot paneling for the two-floor restaurant. The end result is a minimalist, modern, yet still comforting environment.
After acclaim as a top food truck in St. Louis, Seoul Taco opened their first location in St. Louis, Missouri in 2012. After quickly outgrowing that space, Choi opened the current location of Seoul Taco St. Louis in the Delmar Loop neighborhood, near Washington University’s campus. The second location opened in Columbia, Missouri just a year ago on the University of Missouri’s campus. General Manager Joseph Kim will operate the Champaign location.
Choi explains his interest in Champaign, “We’ve seen such a great response from college students at all of our locations, especially universities with a strong international community. We’re all about having fun, putting out great food, and making our guests feel like family. We’re excited to welcome the Champaign community and University of Illinois students to Seoul Taco this weekend.”
Seoul Taco Champaign is open on Sunday through Wednesday from 11 a.m. to 10 p.m. and Thursday through Saturday from 11 a.m. to 2 a.m (note: only 11 a.m. to 10 p.m. until April).
